
Pistachio Crackers Recipe
Ingredients for 11 servings
- Egg 1.
- Honey (or a little more) 1 tablespoon.
- Salt a pinch.
- Seed mix 50 g.
- Raw pistachios 50 g.
- Chickpea or oat flour (approximately 2 tablespoons) 12 g.
- Lemon zest to taste or ginger.
Preparation
Preheat the oven to 160ºC and prepare a large tray with parchment paper.
In a container, introduce the eggs with the tablespoons of honey, agave syrup or the equivalent that we like the most. Beat lightly with a pinch of salt. Incorporate the seed mix and stir well. Add the pistachios and chickpea or oat flour. Give a touch of citrus zest, if desired.
Mix everything well, adding one more tablespoon of honey if necessary, to obtain a somewhat sticky and moist dough. We should be able to take portions and give a flat and round shape with a spoon or with moistened fingers.
Distribute on the tray. Flatten as much as possible, pressing well, if we want them to be crunchier. Bake for about 20 minutes or until they have browned to taste. Depending on the type of sweetener, they will caramelize more or less. Let cool on a rack.
These energetic seed and nut crackers are a perfect snack or snack for any time of the day, or to complete a light meal or dinner. They are also an excellent base for forming small energetic canapés, with some cheese or a homemade spreadable cream.
An additional touch, you can add chopped pure chocolate.
